The second round of Chopped! in our house was Karyn's turn. I had so much fun doing my basket I could not wait for two weeks as we had originally agreed so I went and get the stuf for her basket the day after mine. I wanted to get stuff that did not naturally pair well to see how creative she could be. What she wound up getting was:
Boneless Skinless Chicken Breasts
Graham Crackers
Raspberry All-Fruit
Soy Sauce
I figured these would be an odd mix of ingredients. She took it in stride and off to the store we went. I will let her share the rest, but all I can say is wow!
OK so I cannot go into details with recipes like he did but I can give you the run down. When I first opened my basket I was like I thought you were going to challenge me??? He thought the Raspberry All-Fruit would throw me for a loop but I saw it paired with the soy sauce and immediately thought Barbeque Sauce! So my trip to the store went like this. I grabbed those yummy Corn Flake Crumbs he mentioned, A can of Chipotle peppers in adobo sauce, an onion, cumin, fresh garlic, and ketchup. And rice side dish.
ReplyDeleteWhat I ended up with was a nice breaded chicken tender with homemade chipotle/raspberry barbeque sauce. We happened to have some plain greek yogurt in the fridge and I took that and mixed it with some of the all fruit and some lime juice and made this wonderful yogurt sauce that even my youngest who is a very picky eat loved.
To combat time, I sliced my chicken breasts into long strip and the first thing I did was throw them in a bowl with some olive oil, soy sauce and a bunch of different seasonings. I let that rest and get happy while I made my sauces.
For the sauces I sweated some onions and garlic in a sauce pan and then added a whole jar of the all fruit and some brown sugar. I let that get all liquidy and happy and then I added soy sauce and the can of chipotle in adobe which I had pureed. I took a jar of the tomatoes I had canned from last summer and pureed those and added them as well. I brought it all to a simmer and seasoned with salt, pepper and cumin and let it cook down.
Then I set up a breading station. Flour seasoned with salt/pepper/garlic/cumin, egg wash, and crushed up graham crackers mixed with the corn flake crumbs. I breaded up my chicken and pan fried it in canola oil/crisco.
Not very low fat but OMG who knew that graham crackers would be such an awesome breading flavor! And the BBQ sauce was good but the real star with the chicken was that yogurt sauce that I made as an afterthought!
Next basket is going to be for Tommy. He swears he can do it but has been glued to the food network all week just for tips lol. We will take pics when he's done and post on Friday!
